This limited-edition sake is perfect for the refreshing spring breeze. It uses premium Yamada Nishiki rice from Tojo Shobunya, Hyogo Prefecture, the ideal rice for sake brewing. Highly polished to 42%, it is carefully fermented slowly at low temperatures using soft, underground water from the famous Oi River, which has its source in the Southern Alps' Mount Amanoda. It uses koji made with koji that has been honed since the Tenpo era and premium, in-house preserved yeast. Crafted without regard for yield, this sake has a refreshing, natural aroma and a gentle, rounded, and deep flavor. Enjoy the changes in flavor over the course of 2-3 days, or even a week, after opening.
