“Ranbiki” (all-copper charentais-shaped pot still) is repeatedly used to extract the ‘heart’ (the middle part of the distillate), The distillate is then aged for more than 10 years in Spanish oak barrels in the brewery. It is distilled in-house from our own sake lees. It was renewed and released in 2023, and the bottle is labeled with the year.
